Lemon baked chicken with baked vegetables...

Hey everybody, how you doin? Ever since I put up a picture of this whole roasted chicken on Facebook, folks have been asking for the recipe... so here it is. Sorry for the delay people...


Take bout 3 tablespoons of butter in a bowl, add the juice of one lime. Then drop in some Italian seasoning (optional), salt, pepper, and a few crushed cloves of garlic. Mix it up well and apply it over the chicken as seen below.

First make sure to poke the chicken all over with a fork, this allows the juices to reach the fleshy interior parts. Using your hands rub the butter mixture all over the chicken and into its cavity too. Stuff the lemon skins into the chicken... along with some freshly chopped coriander and mint leaves. 


So here is the little fellow stuffed with lemon skins, coriander and mint leaves....


Place the tray in the oven and bake for 45 minutes.

Wash and cut vegetables into bite sized pieces, here I used potatoes and carrots and onions. Sprinkle a little oil, salt and pepper on them and mix them up well. 

After 45 minutes the chicken would have browned a bit, turn it over and then place the vegetables in the same baking tray around the chicken. Bake for another 45 minutes...

The chicken will have gained a nice brown colour by now, and the vegetables would have cooked too. Insert a fork into both and make sure that they are indeed tender and well cooked. 

The leftover chicken/vegetable juices in the pan can be used to make a little sauce to pour over the chicken.

Mix very little cornflour (bout half a teaspoon) in water and pour it into the baking tray and scrape off all the juices and browned bits of chicken and vegetables into a saucepan. 

Heat this mixture over a low flame... add salt, pepper and a little ketchup (optional) according to taste. 

Pour the brown sauce over the lemon baked chicken and dig in. This is a simple enough dish, no marinating required. It tastes great and I loved the vegetables along with the sauce. Guys in particular will love this dish, its juicy and succulent on the inside and the baked browned exterior is simply irresistible. The green leafy stuffing inside was just perfect... it was all minty and lemony and just too good. 

So have fun with this Lemon Baked Chicken and the rustically baked vegetables.

hmmm... looks tempting... but why are you showing the back side of the chicken all the time? it looks weird. anywayz... do we have to eat the lemon skin also? the stuffing part??

What backside are you talking bout, I was showing you the cavity so that you could see the stuffing? I should have turned it over on the plate... right, so that the legs aren't sticking out. Anyway, you don't have to eat the lemon skins...

Sandhya, I guess you can eat it with rice too and a little curd.

Jane, thanks... I think you can try this in a pressure cooker too, first pressure cook the chicken whole then brown it in a large pan.

What do you think concerning adding some more pics? No offence, content is really great. But according to the scientists visitors acquire info much more effective when they see some helpful pictures.

My school teachers...

So I got to thinking bout my school days recently and it saddened me that I was starting to forget a few teachers who had shaped my life, I have already forgotten nearly half the classmates... though its not my fault. Some people just don't want to join facebook, then how can you find them in this big world. Even if I do find them, there is not much to talk beyond the 'where are you & what are you doing' phrases. But the teachers are another matter, they deserve to be remembered for moulding us. I gotta hand it to the convent school I studied in, they really knew how to select their educators... all the teachers I had shared a genuine passion for teaching and above that they had strong moral values and faith which invariably shaped our lives. To them being a good person was what mattered the most and they made sure we grasped this knowledge, it also helped that I had staunch catholic parents who cemented this view. Anyway, I just wanted to jot down stuff bout my teacher

A tribute to the crazy bunch....

Here are a few picutres that won't find a place in the wedding album... but they were equally (some of them, even more) memorable. Everybody loves sunoj.... I was so happy to see them all...... (first time they were coming to my new place) Sunoj again.... hanging out with this guy is like shopping, ice cream, chocolates... etc. You can't get enough of them. The crazy cousins gave us a very interesting gift... this gift will be with us for six months then it will start its cycle of educating the owners. Though I doubt my cousins need much education in that department. It was fun opening the book and Jardin being the smart guy wanted somethin read from page 69. It was so cute the way Sunoj quickly picked up "The Magic Faraway Tree Series" from the corner and gave me to hold up when Robert uncle walked into the room (turns out he was the one who bought the book).
